Nestled within the bucolic rolling hills of the Nantais region, the Loire Valley's landscape extends westward from Anjou to the Atlantic Ocean, offering a haven for viticulture. Centered around the historic city of Nantes, with roots dating back to the Gauls, this area boasts a rich winemaking heritage. Here, the iconic Muscadet reigns supreme, celebrated as the quintessential pairing for oysters and other delicacies of the Atlantic. But despite the dominance of Muscadet, Poiron-Dabin ventures beyond tradition, crafting Sauvignon Blanc wines that reflect the cool maritime influences of the region. The granitic schiste and crumbly granite soil, plus the cool climate, creates ideal conditions for producing vibrant and taut white wines.
At Poiron-Dabin family have been winegrowers since 1858 and sustainable viticulture practices are at the core of their winemaking philosophy. Laurent & Jean-Michel Poiron make nearly twenty different wines at their estate, but I was taken by the refreshing lightness of their Sauvignon Blanc. The grapes are carefully harvested at full ripeness, ensuring optimal sugar-acidity balance. In the cellar, the fruit is destemming, followed by a gentle, slow pressing, and natural yeast fermentation at low temperatures. After some time, the wine ages on its lees, imparting complexity and enriching the soft aromas. The wine is quaffable, with ethereal and bright notes of gooseberry and starfruit, chervil, mint, and wet river stones.
I love a light, refreshing, aperitif-like Sauvignon Blanc like this. Not every wine needs to be cerebral, but every wine should taste great. Enjoy this with the fresh produce of the season, like a shaved fennel and watercress salad with spring peas and chevré, or a fava bean hummus with sliced carrots and endive.  — Cara Patricia
