Pet-Nat and Lambrusco
Pét-Nats and Lambruscos are sparkling but they aren't like Champagne, Instead, they are categories all their own!
Pét-Nat is short for Pétillant Naturel, or "naturally sparkling". This is another terms for wines made in the ancient Méthode Ancestrale, or ancestral method, the oldest known method of sparkling wine production. Basically, the wine sees one fermentation and is bottled before it has been fermented completely dry. Any leftover yeast and sugar is then fermented in the bottle, resulting in a lightly sparkling wine. Many of these styles will have some sediment in the bottle and a light haze- it's completely fine and natural!
Lambrusco is a semi-sparkling wine as well, often dark in color and a little tannic, made from local grapes like Grasparossa or Sorbara in Emilia-Romagna or Veneto. All of our Lambrusco is totally dry and super food friendly. These wines undergo two fermentation in tank before being transferred to bottle.
