Wild woman wine. I think that can aptly describe the creations of Birgit Wiederstein. Birgit’s vines (and 280 year-old cellar) are in Göttlesbrunn, the center of the undervalued Carnuntum wine region of Austria. Birgit believes in natural beauty. For these reasons, she works completely biodynamically, allowing the vineyard and the vines to show their best side without any makeup. -Cara P.

Soil / Terroir: Clay limestone
Vinification: Minimalist. The grapes are hand harvested. The white wine mash had over 24 hours of contact with the juice before it was pressed. The juice was fermented in small acacia wooden barrels and bottled after resting on the lees.
Tasting Notes: Made from an ancient Austro-Hungarian variety, Harslevelu, which Birgit has planted (over-grafted) on a .5 ha parcel. A layered bouquet with aromas of hay, almonds, prunes, and lime blossom. Fresh and elegant on the palate, different and complex, with a lovely finish. A wine that gets better with every sip.
