El Maestro Sierra can trace its history as an almacenista (wholesaler) in Jerez back to the 1830s, when it was founded by José Antonio Sierra, a top cooper in the region. Wanting to be involved in the sherry trade more directly, he began to age sherry in his own barrels. Today, the winery is still owned by descendants who continue to age and manage the sherry stocks. They incorporate an artisanal approach to their sherries, carefully choosing select stocks of wine, aging them carefully in barrels maintained by their in-house cooper, and manually transferring wines from criadera to criadera by hand as they age.

Vinfication: Aged in solera for 15 years.
Tasting Notes: A great nose of exotic spices and almost red fruits combine with more classic caramel overtones. With great acidity the wine is light on its feet and almost refreshing. El Maestro Sierra Pedro Ximénez should be served at European room temperature (68°F).
