Vinification: Carbonic maceration lifts aromatics in that delicious “Nouveau” style putting purity and fruit in the forefront. Whole clusters are sealed into tanks in a CO2 environment forcing the enzymatic process of intercellular fermentation. Then eventually the fruit is foot crushed and finished whole cluster for a short amount of time producing a wine that is gushing with fruit, lower in tannin and delicious to drink young and slightly chilled!
