Terroir / Soils: 14-65 year old vines planted in varying soil types at various elevations
Vinification: Spontaneous fermentation primarily in tulip shaped 31hl concrete tanks with a small portion of 5-8% in 5hl open-top barrels. Blended together after fermentation, following which the wine spends 10 months aging on the fine lees in tank. Bottled unfiltered to retain its natural character.
Tasting Notes: A grippy, medium-bodied red wine, this Xinomavro has a sanguine character, with aromas of stewed red fruit, fresh soil and dried rose petal. Earthy and serious, but still light on it's feet, this is almost as if Chateauneuf-de-Pape meets Langhe Nebbiolo!
