Fortified Wines

Sherry! Port! Madeira! Oh, My!

It starts as wine, but at some point in it's process, the fermentation is halted by the addition of neutral grape spirit. This may keep the sweetness, such as in Port, Madiera, or Pedro Ximenez Sherry, or the wine can be bone dry, as is Fino, Manzanilla, and Amontillado Sherry. As an aperitif, a cocktail mixer, or after dinner wine, fortified wines are diverse, interesting, and super food-friendly.
