Varieties: Trousseau
- Farming: Sustainable
- Terroir / Soils: Alder Springs Vineyard is known for producing exceptional fruit, specifically focusing on Pinot Noir, Chardonnay, Syrah, and Rhone red and white varietals on its 6,000-acre ranch (only about 140 acres are planted) in Northern Mendocino, just 10 miles from the Pacific Ocean and ranging from 1,700 to 2,700 feet of elevation.
- Vinification: Carbonic fermentation for 25 days in concrete egg, then lightly basket-pressed, and combined the free run juice and put into neutral barrel and puncheon.
- Aging: Bottled after 6 months of elevage in neutral puncheon, unfined and unfiltered without any use of sulfur.
- Tasting Notes: Aromas of sour raspberries, bing cherries, ripe strawberries, and hints of apple cider. There is also a marked salinity mitigating the juiciness of the bright red fruits. Texturally, it is a light to medium wine with subtle, but dry tannins and marked acidity. The salinity is clear on the aromas as well as on the palate, making it the perfect food pairing wine
