Terroir: The total appellation is 5.65 acres on a gradual slope. The red soil on the top is porous, shallow with small stones overlying bedrock but gets deeper lower down the slope where the soil is white, heavy, compacted and clayey.
Vinification: Hand harvested in small crates to avoid premature squeeze during transportation to the winery and then hand sorted in a dark atmosphere with neon light on the table to distinguish the maturation color of each grapes and eliminate the unripe or rotten ones.
Aging: 12 to 18 months (varies each vintages) in barrels with only 25% new oak, from different areas of France and Eastern Europe.
Tasting Notes: Intense but elegant aromas of hawthorn flower, apricot, almond and rare spices. Opulent, rich and unctuous with less minerals than its neighbors. Very round palate, beautiful structure with relatively high acidity lending great character to the wine.
