Mary Keehn got started on the goat cheese trail in the 1970s when she began raising Alpine goats as a source of milk for her children. Soon after, Mary started receiving awards for her herd and became recognized as an expert in the field. Blessed with an excess of milk from fifty goats, Mary started making cheese in 1983, making her a true pioneer in the world of American artisan cheese. Situated where the giant redwoods meet the Pacific Ocean in the rugged northernmost reaches of Humboldt County, California, Cypress Grove gets unique inspiration from the voluminous fog that rolls in nearly every day.

- To optimize cheese quality, keep cheese cold (32º-40ºF). To open the fresh disk, locate the easy-open corner and peel back until the two pieces are separated. If you have a bit left, wrap tightly in plastic wrap and place in the coldest part of your refrigerator. Remove your cheese from the refrigerator at least one hour before serving.
