In production since the 1969 harvest, Bricco del Drago was the first "Super Vino da Tavola" in Piedmont, perhaps also in Italy.
Winemaker: Pietro Colla
Farming: Sustainable
Grape Varieties: 85% Dolcetto and 15% Nebbiolo
Terroir / Soil: Vines planted in 1970, 1989 and 2000, with western exposure at altitude between 330 and 400 meters above sea level.
Vinification: The two grapes - harvested by hand - are vinified separately, as the maturation takes place at different times: the blending of the two wines is done at a later time. The maceration lasts about 5/8 days. for the Dolcetto and 10/12 approx. for Nebbiolo at a maximum temperature of about 25° and 30°, respectively.
Aging: At least a year in oak barrels.
Tasting Notes: Elegant bouquet for the perfect fusion of the finesse of Nebbiolo with the volume of Dolcetto. Spicy and vinous notes typical of the two grapes blended in maturity. In the mouth it has concentration and length, which allow it a surprising possibility of aging. Suitable for robust and tasty dishes, such as gnocchi with tomato sauce, grilled meats and civet preparations
